Buckeyes

Day 4 of our 12 days of Christmas Cookies. Today we are sharing Buckeyes, or some like to call them Peanut Butter Balls. These buckeyes (or peanut butter balls) are such a classic no-bake festive dessert recipe, dipped in dark or white chocolate, then coated with sprinkles.

Now you may ask yourself are these cookies or just a sweet treat? Now when I worked in the elementary school we would have a cookie exchange with some of my co-workers and these were always shared as a cookie exchange. So I guess I just always thought of them as a valid cookie exchange recipe. To each’s own. 🙂

How To Make Buckeyes

So Buckeyes… Super easy to make and requires no baking needed. The only cooking you will be doing, and this doesn’t even qualify as cooking is melting chocolate to dip the balls in. Plus… it only consists of 5 ingredients: peanut butter, powdered sugar, butter, vanilla extract and semi-sweet chocolate for dipping. Oh and sprinkles… to make them festive.

Tips On Making Buckeyes

  • The best way to make sure that all balls are the same size is using a tablespoon to measure out. This will allow you to have the same amount of peanut butter dough round and equal in size.
  • You can dip these buckeyes in your favorite chocolate. Most of the time semi-sweet chocolate is used. I used what I had which was dark chocolate and to make them festive for the holidays I rolled them in Christmas sprinkles. You can switch out the Christmas sprinkles for your colors or occasion you want.
  • I placed my rolled buckeyes in the freezer for 30 minutes to come together quicker before dipping in the melted chocolate.
  • The easiest way to coat your buckeye balls in chocolate is to stick a toothpick into each ball, then lower the ball into a bowl of melted chocolate. This is why you want your buckeyes to be really cold. Just wet your finger very little and smooth over the little hole that the toothpick leaves behind.

Best Way To Store Buckeyes

These buckeye balls can be stored in the refrigerator for up to 7 days. You can always freeze them as well, for about 2 months.

Buckeyes

These buckeyes (peanut butter balls) are such a classic no-bake festive dessert recipe, dipped in dark or white chocolate, then coated with sprinkles.

Ingredients

1 cup Peanut butter, creamy

1 1/2 cup Powdered Sugar

4 Tablespoons Unsalted Butter, room temperature

1 teaspoon Vanilla Extract

1 1/2 cups Semi-Sweet Chocolate (I used Dark Chocolate)

Holiday Colored Sprinkles

Instructions

In a medium bowl add peanut butter, powdered sugar, butter and vanilla extract.  Mix until all is incorporated and you cannot see the powdered sugar anymore.

Shape the dough into tablespoon sized balls and place on a sheet pan, lined with parchment paper.

Refrigerate the buckeye balls for at least 30 minutes.

Microwave the chocolate in 30 second intervals or until melted. Stir until smooth and thoroughly combined.

Remove the buckeye balls from the fridge. Use a toothpick to pick up each ball and and dip into the melted chocolate. (Optional), roll the ball in sprinkles if using. Repeat with each ball.  Dampen your finger slightly, to smooth over the top of each ball to remove the mark from the toothpick.

Refrigerate for 30 minutes or until set.
